Oleavia EVOOs are produced from single-estate farms, ensuring complete traceability and authenticity. We are so particular about quality that even within the same farm, we recognize the unique characteristics created by different elevations and microclimates. Because these conditions affect the yield and flavor profile of the olive oil, we carefully separate them into distinct Editions within the same farm.

At Oleavia, we begin harvesting our olives in late September to early October, when the fruits are still unripe. Harvesting early not only results in a lower yield, but also ensures significantly higher polyphenol content, delivering exceptional health benefits and vibrant flavor. These unripe olives create oils that are more robust, peppery, and full of character — a true reflection of their natural antioxidants and freshness.

At Oleavia, our olives are never harvested with heavy machinery that can harm the trees. Branches are gently shaken by hand, and fruit from higher places is brought down using a motorized long stick with a soft, controlled vibration onto a soft net. From there, each olive is carefully hand-picked so we can separate out any bruised or overripe fruit. This gentle method protects the trees, preserves the quality of the fruit, and ensures only the finest olives make it into our oil.

Within hours of harvest, our olives are cold pressed at their freshest. Unlike many that sit for days or even weeks before pressing—leading to oxidation, and nutrient loss—we press ours immediately. This preserves the highest levels of polyphenols, antioxidants, and aroma compounds, resulting in an olive oil that is vibrant, nutrient-dense, and full of fresh, authentic flavor.

After pressing, our Extra Virgin Olive Oil is stored in stainless steel tanks with a protective nitrogen layer. This careful method minimizes contact with oxygen, preventing oxidation and preserving the oil’s antioxidants, fresh aroma, and natural flavor until bottling.

Oleavia is always bottled in dark glass. We never use plastic, as it accelerates oxidation and can compromise quality and health. Each bottle has a Biolio® cap, designed to further minimize oxidation and preserve freshness with every pour. This ensures that once opened, Oleavia maintains its high polyphenol content, vibrant flavor, and rich aroma for longer — protecting the integrity of our oils from harvest to your table.
