What you'll taste

Fresh, green, with a peppery finish.

We harvest our olives in early October, while they're still unripe. Harvesting this early means getting less oil from each olive, but it helps us achieve the fresh flavors and naturally occurring polyphenols we're looking for.

South Aegean Special has a fresh, fruity, and leafy character, with notes of oregano, followed by a pleasant bitterness and a peppery finish. You may notice a little warmth at the back of your throat. That's a natural characteristic of certain compounds found in extra virgin olive oil.

We press our olives within hours of harvest and carefully store the oil in stainless steel tanks under nitrogen to help preserve its freshness.

Polyphenols are naturally occurring compounds in olive oil, known for their antioxidant properties. Harvesting early, pressing within hours, and carefully storing our oil help preserve them.

From tree to bottle

 The care behind every bottle.

Good olive oil comes from a series of careful decisions, from when the olives are harvested to how the oil is bottled. Here's how we care for ours.

  1. 1Early Oct

    Early harvest

We harvest our olives while they're still unripe, in early October. This means a smaller yield, but helps us achieve the fresh flavors and naturally occurring polyphenols we value.

  2. 2By hand

    Hand-picked

No heavy machinery. Branches are shaken by hand onto soft nets, then every olive is sorted by hand so bruised or overripe fruit stays out.

  3. 3Within hours

    Cold-pressed

Our olives are taken to the mill and cold-pressed within hours of harvesting. Keeping this time short and the temperature carefully controlled helps preserve the oil's freshness and natural qualities.

  4. 4Under nitrogen

    Stored in stainless steel

After pressing, our olive oil is stored in stainless steel tanks under nitrogen. This limits its exposure to oxygen, helping protect its freshness until bottling.

  5. 5Sealed piping

    Combined with care

Each of the three estates' olive oils goes through the same careful process before being brought together to create South Aegean Special. They're transferred through sealed piping into a single tank, limiting exposure to air along the way.

  6. 6Never plastic

    Dark glass, Biolio® cap

We bottle our olive oil at the source in dark glass to protect it from light. The Biolio® cap helps limit exposure to air during use, preserving freshness after opening.

Aydin, Türkiye
FROM THREE ESTATES

Three single estates. Two olive varieties. One bottle.

Every Oleavia olive oil begins at a single estate, so we know exactly where it comes from. We even keep oils from different elevations of the same farm separate, because altitude and microclimate can influence flavor.

South Aegean Special is the only olive oil in our collection where we bring three estates together, all from the same region of Aydın, Türkiye. Each goes through the same careful process before being combined, bringing their individual characteristics together to create a flavor of its own, while preserving the naturally occurring polyphenols we value.

Memecik · Estate oneThe Aegean's signature variety. Bold, robust and peppery.
Memecik · Estate twoSame variety, different ground, adding another layer of character
Ayvalık · Estate threeMilder and more delicate, bringing balance to the bold character of Memecik.

HOW TO ENJOY IT

From everyday cooking to the finishing touch.

Drizzle to finish

Add a drizzle over soups, beans, grilled fish, or burrata just before serving. A simple way to bring out the oil's fresh, peppery character.

Roast and sauté

Use it to roast vegetables, sauté greens, or prepare your favorite dishes. Good extra virgin olive oil isn't just for finishing; it's for everyday cooking, too.

Dress and dip

Combine with fresh lemon juice and a pinch of salt for a simple salad dressing, or enjoy it with warm bread and a little sea salt.

A daily spoonful

Some enjoy a tablespoon of extra virgin olive oil each morning as part of their daily routine. It's a simple way to appreciate its fruity notes, pleasant bitterness, and peppery finish, along with the naturally occurring polyphenols it contains.

Questions

Good to know before you order.

Why does it feel peppery at the back of my throat?

That peppery sensation comes from naturally occurring compounds in extra virgin olive oil, particularly oleocanthal. It's a characteristic of many good olive oils, although its intensity varies. South Aegean Special has a pronounced peppery finish, which some may experience more strongly than others, as everyone's palate and sensitivity are different.

Can I cook with it, or is it only for finishing?

Absolutely, you can do both! Extra virgin olive oil is suitable for everyday cooking, including sautéing and roasting. You can also enjoy it raw or drizzle it over finished dishes to fully appreciate its fresh flavors.

How fresh is the bottle I'll get?

Our current bottle comes from our latest available harvest, picked in early October 2025. Olives are harvested once a year, so it's normal to enjoy olive oil from the previous fall until the new harvest is bottled and ready. This harvest has a best-by date of March 2028.

What's in it?

Nothing but 100% extra virgin olive oil, made from Memecik and Ayvalık olives grown in Aydın, Türkiye. No additives, preservatives, or other oils.
