Filtered vs. Unfiltered Olive Oil: Which One Is Better?
Neither filtered nor unfiltered olive oil is automatically better. Filtration does not determine quality on its own. For oil that will travel, sit in storage, or be used gradually over several weeks at home, a well-made filtered extra virgin olive oil is usually the more stable and reliable choice. What matters most is how carefully the oil was made, protected, and bottled from harvest to your kitchen.
There is something romantic about unfiltered olive oil.
It looks cloudy, raw, and close to the harvest. For many people, that cloudy appearance feels like proof that the oil is more natural, more nutritious, or higher quality.
We understand why. Especially when olive oil is freshly pressed, unfiltered oil can be an incredible experience.
But with olive oil, appearance can be misleading.
The truth is more nuanced: unfiltered olive oil is not automatically better, and filtered olive oil is not automatically lower quality. What matters most is the quality of the olives, how quickly they were pressed, how the oil was stored, how much oxygen, light, and heat it was exposed to, and whether the producer protected the oil after it left the mill.
Filtration is only one part of the story, but it is an important one.
What is unfiltered olive oil?
When olives are harvested and pressed, the oil naturally contains tiny pieces of olive pulp, skin, and small droplets of vegetation water. If the oil is bottled without removing those particles, it is called unfiltered olive oil.
This is why unfiltered olive oil often looks cloudy or "veiled." In very fresh oil, especially right after harvest, this can be beautiful. Many people love its intense green aroma, grassy notes, and fresh character.
In Italy, you may hear this very fresh oil called olio nuovo, meaning "new oil." When enjoyed immediately after harvest, it can be a special seasonal experience.
But there is a reason this experience is traditionally short-lived.
Why unfiltered olive oil can have a shorter shelf life
The small particles and moisture left in unfiltered olive oil are not just visual. They can continue interacting with the oil during storage.
Over time, the sediment and water droplets may encourage fermentation, enzymatic activity, and off-flavors. This does not mean every cloudy bottle is bad. It means unfiltered oil is more delicate, and it needs to be treated that way.
The International Olive Council recommends filtration to remove suspended water and solid microparticles, explaining that it helps optimize shelf life by reducing the likelihood of fermentative and chemical reactions that can compromise the oil's original quality. UC Davis adds that excessive moisture and sediment can give an oil a relatively short shelf life, sometimes only a few months.
Unfiltered olive oil can be wonderful when consumed quickly, but it is more fragile.
That is why unfiltered oil is best treated as a very fresh, seasonal product, not as the ideal choice for a bottle that will sit on a shelf, travel through distribution, or be opened and used slowly at home.
If you ever visit an olive oil-producing country during harvest season and have the chance to taste fresh, unfiltered extra virgin olive oil right at the mill, try it. That first taste, often just moments after pressing, can be one of the most memorable ways to experience olive oil. Vibrant, intense, and deeply connected to the harvest.

Does filtration remove polyphenols?
This is where many brands oversimplify.
Some research shows that filtration can reduce certain phenolic compounds, because some phenols are associated with water droplets and suspended particles. A UC Davis review of olive oil filtration notes that filtration can produce positive, negative, or neutral effects depending on the oil, cultivar, filtration system, and storage conditions. Their review specifically says there is "no simple answer" to whether filtration is always better or worse.
Yes, filtration may reduce some phenolic compounds in certain oils. But that does not automatically mean unfiltered oil will be healthier by the time the customer actually consumes it.
A high-polyphenol oil that is filtered, stored properly, protected from oxygen, and bottled correctly may retain its quality better over time than an unfiltered oil that starts beautifully but deteriorates quickly.
The number at the mill is not the only thing that matters. What matters is how well the oil is protected until it reaches your kitchen.
Can unfiltered olive oil develop defects?
Yes, especially when it remains in contact with sediment for too long.
The International Olive Council classifies "fusty/muddy sediment" as a recognized negative attribute in olive oil sensory evaluation. This defect can develop when oil is left in contact with sediment that undergoes fermentation.
This does not mean every cloudy bottle is defective. It means sediment and moisture are risk factors, especially with time.
Once an oil develops a sensory defect, it no longer represents what true extra virgin olive oil should be. Extra virgin olive oil should have fresh fruitiness and no sensory defects.
So why do producers filter olive oil?
A good producer filters olive oil to protect it.
According to IOC best practice guidelines for olive oil storage, filtration can remove suspended solids and moisture before storage, and may help reduce the risk of fermentation, muddy sediment defects, and quality loss over time.
A 2021 study in the Foods journal on EVOO filtration and microbial content found that filtration reduced suspended solids, water content, bacteria, fungi, and yeast, depending on the filtration system and oil characteristics.
Another study from 2020 on veiled extra virgin olive oil stability found that high water activity and microbial contamination were linked to volatile compounds responsible for “fusty” sensory defects, and described filtration as a way to remove those water and solid particles.
For a producer who cares about consistency, stability, and the customer's experience months after harvest, filtration is often the more responsible choice.
Does filtered olive oil mean lower quality?
Not at all.
Low-quality olive oil can be filtered. High-quality olive oil can be filtered. Low-quality olive oil can be unfiltered. High-quality olive oil can be unfiltered.
Filtration does not create quality from a poor oil. It also does not erase the quality of a great one.
A truly high-quality olive oil begins long before filtration. It starts with healthy olives, careful grove management, early harvest timing, proper milling, fast pressing, low oxygen exposure, good storage, and protective packaging. Filtration should be seen as part of protecting that quality, not as a shortcut or a substitute for it.
When is unfiltered olive oil a good choice?
Unfiltered olive oil can be a wonderful choice when it is very fresh, ideally right after harvest, and when it will be consumed quickly.
It can also be a satisfying experience when you know the producer, trust how the oil was handled, and understand that it is more delicate than a filtered bottle.
Think of unfiltered oil like a seasonal fresh product: expressive and exciting, but not built for a long shelf life.
When is filtered olive oil the better choice?
Filtered olive oil is usually the better choice when the oil will be shipped, stored, sold in a retail environment, or used slowly over time at home.
For most customers buying olive oil from a store or online, a well-made filtered extra virgin olive oil is the more reliable option. It stays cleaner and more stable from the first pour to the last.
That matters, because when you buy a good olive oil, you are not only paying for how it tasted at the mill. You are paying for how it tastes when it reaches your kitchen.
