Shepherd’s Salad

  • 🫒 Oleavia Asilik II Edition Extra Virgin Olive Oil (Or any Oleavia Regular EVOOs)

Ingredients

Ingredient Amount
Oleavia Extra Virgin Olive Oil 1/4 cup
Large tomatoes, diced 2
Cucumber, diced 1
Green bell pepper, finely chopped 1
Small red onion, thinly sliced 1
Fresh parsley, chopped 1/4 cup
Shishito peppers, diced (optional for heat) 2
Fresh mint, chopped (optional) 1/4 cup
Juice of lemon To taste
Salt To taste

Instructions

  1. In a large bowl, combine tomatoes, cucumber, bell pepper, onion, parsley, and mint.
  2. In a small bowl, whisk together lemon juice, olive oil, and salt.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately, garnished with additional parsley if desired.
