Large tomatoes, diced | 2 |
Cucumber, diced | 1 |
Green bell pepper, finely chopped | 1 |
Small red onion, thinly sliced | 1 |
Fresh parsley, chopped | 1/4 cup |
Shishito peppers, diced (optional for heat) | 2 |
Fresh mint, chopped (optional) | 1/4 cup |
Juice of lemon | To taste |
Salt | To taste |
Instructions
- In a large bowl, combine tomatoes, cucumber, bell pepper, onion, parsley, and mint.
- In a small bowl, whisk together lemon juice, olive oil, and salt.
- Pour the dressing over the salad and toss to combine.
- Serve immediately, garnished with additional parsley if desired.
