WHY WE CALL IT POMEGRANATE PASTE

 JUST POMEGRANATES. NOTHING ELSE.

You may know this traditional ingredient as pomegranate molasses. We call ours Pomegranate Paste to reflect how we make it: 100% pomegranates, with no added sugar, citric acid, or preservatives.

We press the fruit for its juice, then slowly reduce it under vacuum at a gentle temperature. As the juice concentrates, it naturally develops a rich, smooth consistency while remaining easy to pour. The result is a deep, bold pomegranate flavor with pronounced tartness and a touch of the fruit's own natural sweetness.

Hard to find, easy to taste the difference

Real pomegranate products made from 100% fruit can be harder to find than you might expect. But ingredients are only part of the story. We slowly reduce our pomegranate juice in a closed vacuum system at a gentle temperature, allowing it to naturally thicken while helping preserve its antioxidants. The result is a rich, deep burgundy concentrate with bold tartness, a touch of the fruit's natural sweetness, and a smooth, pourable consistency. All without adding anything to the fruit.

How it's made

Four steps, one ingredient, a lot of patience

  1. Select

Our pomegranates are carefully selected for quality, ensuring the fruit is ready for pressing.

  2. Granulate & press

The pomegranates are prepared and pressed to extract their naturally rich, deep red juice.

  3. Separate

Pulp and seeds are separated out, leaving only 100% pomegranate.

  4. Slow vacuum reduction

The juice is slowly reduced in a closed vacuum system at just 149°F. This gentle process allows it to naturally thicken while limiting heat exposure, helping preserve the fruit's delicate compounds and naturally rich, tart flavor.

Questions

Good to know

Is pomegranate paste the same as pomegranate molasses?

They're closely related. Pomegranate molasses is the more familiar name for concentrated pomegranate juice. We call ours Pomegranate Paste to reflect how we make it: 100% pomegranates, slowly reduced under vacuum at a gentle temperature, with no added sugar, citric acid, or thickeners.

Does it contain any sugar?

Pomegranates naturally contain sugar, and that natural sweetness becomes more concentrated during reduction. We don't add any sugar or sweeteners. The result is a predominantly tart flavor with a touch of sweetness from the fruit itself.

What does it taste like?

Bright, tart and balanced, with deep fruit flavor. Think of a concentrated pomegranate with a gentle natural sweetness, closer to a fine balsamic than to a syrup.

How much should I use?

A little goes a long way. Start with a teaspoon for yogurt, sauces, or desserts, and adjust to your taste. For a simple salad dressing for two, try one tablespoon of Pomegranate Paste with three tablespoons of extra virgin olive oil.

How should I store it?

Keep it closed in a cool, dry place away from heat and light.

What should I pair it with?

Its naturally tart flavor pairs beautifully with roasted vegetables, lamb, goat cheese, and even vanilla ice cream. For a simple Mediterranean-style dressing, try combining it with our Lemon Fused Extra Virgin Olive Oil.

How fast does it ship?

Orders typically ship within 1–3 business days, with delivery generally taking 3–10 business days depending on your location. You'll receive tracking information once your order ships. Orders of $75 or more qualify for free shipping, and free local pickup at Coccinella is usually ready within 24 hours.
